Banana Bread Muffins

Ingredients:

  • 4 medium bananas (mashed) 1/2 cup dark brown sugar

  • 1/2 cup granulated sugar

  • 1/2 cup butter

  • 2 eggs

  • 1tsp maple syrup

  • 1/2 cup sour cream or Greek yogurt

  • 1 1/3 cup flour

  • 1 tsp baking soda

  • 1/2 tsp coarse salt

  • a whole chocolate bar, chopped (optional)


Instructions:

  • Preheat oven to 325 degrees F

  • Prep your muffin tin, I like to use parchment liners for a fancier feel. (There is a link on how to make those in my pumpkin muffin recipe)

  • In a small bowl mix together flour, baking soda, and salt, and set aside

  • In a large bowl whisk together the sugars, melt the butter, and add that in. Mix until combine

  • Then add the bananas, sour cream, maple syrup, and eggs. Mix until combined

  • Fold in the dry ingredients little by little

  • Then fold in the chocolate pieces

  • Scoop about 1/3 cup into each muffin and use the rest of the batter to top off the tray

  • If you would like you can add a little more chocolate on top

  • Bake for 30-40 minutes, or until a toothpick comes out clean

  • let cool for 15 minutes and enjoy!


I get free bananas from work, so it only makes sense to make banana bread every now and then. I love chocolate chip banana bread so I added a chopped-up dark chocolate bar to this batch. Chocolate is optional but, why the hell not?


These turned out so good, and now I have breakfast for the next week or two, they freeze really well also.
