Ingredients:
3 cups all-purpose flour
1 tsp baking soda
1 tsp coarse salt (I like saltier cookies, if you don't use fine salt)
2 sticks of unsalted butter, browned
1/2 cup granulated sugar
1 1/4 cup dark brown sugar
Maple syrup (vanilla substitute, measure with your heart)
2 eggs
Chocolate (you can use chips or a chopped bar, also measure with your heart)
Instructions:
In a medium bowl combine flour, baking soda, and salt then set aside
In a large bowl beat the butter and sugars for about 2 minutes (this can be with a stand mixer, hand mixer, or just whisking)
Add one egg, whisk until combined, then add the second egg and maple syrup
Gradually add in the flour mixture from earlier
Then fold in the chocolate
cover and let sit in the fridge for 24-48 hours
When ready to bake preheat the oven to 350 degrees
Line a baking sheet with parchment paper
Roll dough into balls (you can make them as big or small as you want, the size will affect baking time)
Bake for 10-12 minutes
Let cool for 5 minutes then transfer to a baking rack to finish cooling
Enjoy!
These cookies are absolutely delicious, especially if you let them sit in the fridge overnight. That allows the dough to soak up the flavors, and the cookies come out better than baking on the spot.
If you want to make these cookies even better then you can add toffee, I love adding toffee pieces to this recipe, it just gives them that perfect punch of flavor. I have a toffee recipe posted, I recommend using that one.
